The crumb coat is arguably the hardest and most important step when decorating a cake.
Kayla Brown, Owner of Sugar Cubes Cakes in Gresham, OR is an award winning cake decorator and will walk us through a successful crumb coat.
Tips for success!
Mise en place- French culinary phrase which means "everything in place" or "gather". You will; be most successful when you aren't running all over the kitchen looking for tools in the middle of your project.
Tools-
★Turn table and non-stick skid mat
★Long serrated knife
★Crumb boat and frosting container
★Off set spatula
★Bench scraper
★Pastry Bag
★Chilled cake (not frozen, not warm)
Cutting and filling- Level off the tops of the cake and slice evenly through the middle. Even layers allow for optimal consistency and handling of cakes. Make sure to have "bottom side" as your top and bottom layers.
Damming layers- Leaking or oozing of filling will make your cake unstable and so much harder to frost.
Crumb coat is a crucial step before you get to the pretty stuff. Make sure not to mix this frosting with your buttercream (use the crumb boat). This layer doesn't need to be very thick or pretty. The intention is to hold everything together.
Chill 302-60 minutes until frosting is firm before final frosting (or second crumbing for fondant).
When finishing your cake, chilling between steps is very helpful. Chill before drip, inscriptions or covering with fondant.
